Pocket Sandwiches

If you like Hot Pockets, follow this recipe to make these at fraction the cost!

Ingredients:
Grands (or store brand) biscuits
Favorite Fillings, for example:

Ham and Cheese
• diced lunch meat
• shredded cheese
• cooked broccoli (cut into small pieces)

Pizza
• spaghetti sauce
• shredded cheese
• pepperoni (cut into smaller pieces)

Turkey
• diced lunch meat
• shredded cheese

BBQ chicken
• Leftover chicken (diced, chopped or shredded)
• BBQ sauce
• Thinly sliced onions (if desired)

Preheat your oven according to biscuit package directions. Roll out each biscuit into a thin, flat circle. Gently place desired fillings into one side of circle. Fold each circle in half. Use a fork to press edges together. With a very sharp knife, make 1” slits in top of sandwich.  Transfer to a baking sheet.  Repeat with other biscuits. Bake according to package directions. Remove from oven and test to be sure inside of biscuit has cooked. Return to oven if needed (cover with foil, if biscuits have browned, yet inside has not been heated.) Enjoy!
