Funnel Cakes

Who isn't tempted by hot, sweet, fried dough?  Head to any amusement park, fair or summer event and chances are, you'll have someone exclaiming, "I want a funnel cake!"  If you purchase one, the hefty price may be cheaper than homemade.  However, you could make a hole pile of these less expensively than buying a few.  Check out the recipe below:


Ingredients: 
  • 2 Beaten Eggs
  • 1.5 Cups of Milk
  • 2 Cups Flour
  • 1 tsp. Baking powder
  • 1/2 tsp. Salt
  • 1 Pint Cooking Oil


Toppings (offer what’s on hand)
  • Sifted Powdered Sugar
  • Cinnamon/Sugar
  • Canned Pie Filling
  • Whipped Topping


     Heat oil in heavy-duty sauce pan to medium-high.  (Funnel Cakes will be the shaped like the pan you choose.)  Mix eggs and milk in small bowl.  Sift Flour, baking powder and salt in larger bowl.  Combine wet and dry ingredients.  Test oil by dropping a small amount of batter into pan.  (Oil is hot enough when batter sizzles, browns and begins to float.)  Remove test batter w/slotted spoon or strainer.  Hold funnel over pan.  Ladle batter into funnel, moving funnel over pan to form a thin stream of batter going into the grease.  Allow funnel cake to brown on one side, then carefully flip with metal tongs.  Move to a paper towel lined plate when done.  Add toppings listed above.  Repeat until batter has been used up.  (Note:  Add additional oil to pan, if needed.  Allow to return to proper cooking temperature prior to cooking more cakes.)


     This recipe makes more than your family may be able to eat. I took extras to our long-time next-door neighbor the first time I made them. She was delighted b/c her family had recently been tempted to buy some at the fair and chose not to do so b/c of the expense.
