Peanut Brittle

Although boxes are available at the Dollar Tree and other retailers, these don't compare to the taste of homemade.  Use brittle for entertaining and/or gift giving.

Ingredients:
2 c sugar
1 c light corn syrup
¼ c margarine
½ c water
2 ½ c salted peanuts
1 ½ t sifted baking soda

Grease 2 baking sheets and the sides of a 3-qt saucepan.  Stir and cook sugar, corn syrup, margarine and water over medium-high heat for nearly 30 minutes until temperature is 275 degrees.  Add nuts, then cook and stir for 20 minutes more (295 degrees).  Remove from saucepan then add baking soda, stirring constantly.  Immediately pour onto baking sheets.  Break into pieces when completely cooled.  Store in an airtight container.
